What is bubble tea? How did the combination come about? If you have ever had these questions, we are going to explain everything you need to know before trying it.

Originating from Taiwan, this drink is taking the world by storm due to its versatility and originality. Have you ever imagined drinking something and finding tapioca pearls at the bottom? The truth is, neither did we, but in Mexico, Cassava Roots made it possible.

First, let us put you in context. In 1983, during a visit to Japan, Liu Han-Chieh discovered that people were delighted with the cold version of coffee, with ice cubes, so he thought that tea could also be served this way. When he returned to Taiwan, he decided to open a store that sold cold tea.

After his success selling iced tea, in 1988, Liu Han-Chieh decided to add tapioca pearls to the drink. At that time, it was common for tapioca to be used in a dessert called Fen Yuan. The combination was so loved that they immediately included it in their menu and it was a total success.

After many years of perfecting the product, mysterious combinations, and its success in Asia and Europe, it finally arrived in Mexico.

On July 4, 2008, Cassava Roots opened its doors and offered the Mexican public something new, innovative, and original, taking the flavor of bubble tea to another level.

Legend has it that Sensei Ichiro Kokoroto embarked on a journey in search of something that would enhance his students' performance and came across a black bonsai, leafless with golden roots. While preparing this root with the ancient pot of his ancestors, he discovered the formation of black pearls, these pearls along with herbal teas increased the power and performance of his students in combat.

His legacy transcended through the years, and his successors Daniela and Patricio Lombardo shared it with the world by creating Cassava Roots, the best bubble tea in the world.

Tapioca or boba is a tuber that comes from cassava, and being a starch, it is gluten-free. What is interesting is that by itself, it has no flavor, which is why it is perfect for being mixed.

Currently at Cassava Roots, it is made daily in an artisanal way with a special recipe of natural honey.
